My go-to Crockpot Mexican Chicken

Hi Guys! I hope you’re all having a great week so far. I have been posting this recipe a ton on my instagram stories and realized I never typed it up! As all of you know, I am all about convenience when it comes to cooking. I have a small crock pot that I like to cook chicken in and one of my go-to recipes is my Mexican chicken. You can use this chicken mixture in tacos, enchiladas, quesadillas, or over a bed of lettuce for lunch. It’s SO tasty and delicious. Not to mention EASY to prepare!

 

Ingredients:

-Chicken breast (I use about 3-4 medium chicken breasts)

-1/2 cup low sodium chicken broth

-1/2 cup salsa of your choice

-Taco seasoning mix (at least half the package) The more you add, the spicier it becomes

Directions:

-Add all ingredients to the crock pot.

-Coat the chicken and flip over so it is fully coated

-Cook on low for at least 3.5 hours. You can cook on low for longer but it will be done after 3.5 hours

-Devour

Once the chicken is cooked, I love to make enchiladas, tacos, quesadillas or even a taco salad. It’s so delicious and easy!!
